Grilled Chicken with Slightly Spicy Garlicky Green Sauce

About the Recipe

The flavor of anything when it hits a grill is just so enticing. The char, the smoke, I love everything about it. I'm so happy for warmer weather!

Ingredients

3lbs chicken thighs, boneless, skinless

1/4C vegetable oil

 

Spice Rub:

1Tbsp cumin, ground

1Tbsp smoked paprika

1Tsp garlic, granulated

1Tsp onion powder

1Tsp coriander, ground

1/2Tsp black pepper, ground

1Tbsp salt

 

Green Sauce:

1 bunch cilantro, most of the stem included (I trim the bottom)

1 bunch parsley, most of the stem included (I trim the bottom)

1 bunch green onion, green parts only

3 garlic cloves

1-2 jalapeños, chopped (depends on the spice level you want)

2 big handfuls spinach

4 limes, juiced

1Tsp salt

1C olive oil or vegetable oil

1C mayonnaise*

 

*This sauce works with mayonnaise, sour cream, or Greek yogurt. I would use whatever I had on hand!

 

Preparation

1: To prepare the chicken, whisk together all the spices. Add the chicken to a bowl, pour over oil and spice mixture and combine to marinate. I like a minimum of 30 minutes to marinade but you can go for a couple hours in the refrigerator if you have the time.

3: To prepare the green sauce, add ingredients except mayonnaise to a blender. Blend until smooth, then add in the mayo and blend again. Store in the refrigerator.

4: Grill chicken over medium high heat until cooked to 165 degrees. Enjoy!
