I love pesto and the end of March has be yearning for all things green and spring. We just got a snow storm :) so there's that. Spinach is a great way to bulk up pesto without the flavor being altered.
Ingredients
1.5oz basil, leaves only
2oz spinach
3/4C parmesan, cubed
1/2 pistachios, roasted and salted
2/3C olive oil
1Tbsp garlic, minced
Zest and juice of 1 lemon
1/2Tsp salt
1/2Tsp black pepper
Preparation
Add all ingredients in a food processer and pulse together. Store in an airtight contain.
